Cayron makes proper old-school Rhone wine. Only one wine is made each year - there are no deluxe souped-up super cuvees here, and it is aged in huge old casks. 'New' oak at this domaine means around 30 years old and the oldest cask is an ex-beer foudre aged over 70. Everything is slightly rustic and shambolic in a very charming way. We liked this place a lot.
