Lawyer and vigneron Hubert de Montille was perhaps the star of the film Mondovino; cast as the voice of tradition and authenticity in Burgundy against the manufactured modernism of Michel Rolland (high profile consultant in Bordeaux). Now into his eighth decade, Montille has relinquished control of the domaine to his son Etienne, although he maintains a close eye on proceedings. The wines are famously long-lived with a light extraction, minimal chaptalisation (Montille Snr believes elegance is sacrificed above 12%) and little new oak producing wines that are tight and reserved in their youth but which blossom dramatically given time.
