Tasting Notes
Stylish and fun label portraying the skyline as seen from Primrose Hill itself! The wine is rich yet refreshing with both breadth and finesse - stylish but dangerously gluggable. Winemaker Owen Elias can't quite bring himself to admit that it is one of the best sparkling wines Chapel Down have ever produced!
Vinification Details.
Traditional method - We have developed our own unique cuvee with Chapel Down which uses a proportion of oaked wine in the liqueur d'expedition (dosage). This gives the wine a great mouthfeel and complexity without losing any freshness or purity.
It spends 2-3 years on its lees in bottle, imparting further richness and biscuity complexity. The dosage (RS) is 9g/l and the abv 12% - making it similar to most Brut Champagnes.

Producer Information
Chapel Down is rapidly establishing itself as a world class premium wine brand and is gaining National and International recognition. It is proud to be the first ever English producer to wine a gold medal for sparkling wine at the prestigious International Wine Challenge. And its wines are getting better with every vintage. Chapel Down boasts a state of the art winery and produces all wines on the estate, both still and sparkling. The grapes are hand-picked and transported to the winery in small bins. They are gently tipped into modern membrane presses and the resultant juice fractions are collected in stainless steel tanks. All still wines and sparkling base wines are fermented with selected yeast strains at cool temperatures for up to 3 weeks. Some maturation of sparkling base wines and red wines occurs in French and American oak barriques. These wines are topped and tasted regularly throughout their maturation to ensure freshness and homogeneity. The wines are then racked, blended, stabilised and filtered before bottling. Its sparkling wines spend up to 3 years on lees, "sur lie" as part of the Chapel Down house style. After the desired period of maturation, the bottles are hand transferred to their modern Gyro pallets for riddling.
