"A delicate pink with 85 per cent Pinot Noir and just 15 per cent of Chardonnay in the blend, which includes a substantial proportion of older reserve wine. Scents of perfumed berry fruits, while the palate delivers appetisingly rich but savoury, full-bodied fruitiness."
Vinification Details.
As with all Bruno Paillard's Champagnes, only the first pressing of the grapes is used. The Pinot Noir is gently pressed and vinifed as a white wine without the skins before blending with a proportion of red or rose wine to give it colour. This wine is blended with older reserve wines and a small proportion of Chardonnay to make the final blend which then undergoes a second fermentation in bottle to create the bubbles for which Champagne is famous. A very low dosage is added before release.

Founded in 1981, Champagne Bruno Paillard is a young, dynamic house that has quickly established a reputation for elegant wines with real style. Fresh, dry and vibrant, they are made with an uncompromising attitude to quality that shines through in the glass. The house follows a strict quality charter that includes only using the first pressings, vinifying each cru separately and putting the disgorgement date on each bottle. Bruno was made a Chevalier of the Legion d'Honneur in 2006 for his services to Champagne.
