Tasting Notes

Pale gold in colour, with a fine and generous mousse. On the nose, notes of small red fruit, fresh fruit compote and marshmallow give the wines its freshness and delicacy. On the palate, the notes of fresh fruit are still present and combine with hints of brioche.

Vinification Details.

Vinification is in stainless steel at a controlled temperature of 16 to 18 ° C. The alcoholic fermentation lasts 15 days. After tasting and according to the terroir, the wine is either kept on its lees or racked. (on a tank by tank basis). The malolactic fermentation takes place at 19-20 ° C followed by blending, followed by tartaric stabilisation over a long period (5 days at 3.5 ° C). The wines are bottled after 5 months in tank, and then mature for 24 months in the cellars at an average temperature of 11/12 ° C. Disgorgement and dosage (10 g/l of sugar) with a liqueur made from Chardonnay and Pinot Noir. The wine rests for a minimum of 3 months before release.

The red cross of Saint Andre is symbolic of over a century of history and family tradition, the house was established in 1895 by Vicompte Florens de Castellane. It is today owned by Champagne Laurent Perrier and although fully integrated in its commercial strategy, De Castellane retains its traditional image and exists as a separate brand.

Based in the centre of Epernay, the impressive 'Belle Epoque' listed headquarters of Champagne de Castellane were built around 1890, and designed by architect Auguste Toudoire; famous for grand railway stations such as the Gare de Lyon in Paris. The buildings are topped by a striking 66m high tower; a landmark in Epernay and an emblem for the region, and there are 6km of cellars underground! The Laurent Perrier Group has long term contracts with vine growers to guarantee consistency and quality, the style is extremely accessible for all bubble lovers...you will not be disappointed!


Regional info.

The grapes come from 70 different villages throughout Champagne : Montagne de Reims, Valle de la Marne, Cote des Blancs, Sézannais, Vitry, Aisne and the Aube. Approximately 20% of reserve wine is used, guaranteeing the consistent quality of the champagne.
