Vinification Details.
1st fermentation in oak barrels or small tanks. Special Cuvee is blended essentially with the wines coming from the most recent harvest but also with wines from previous harvests including - a Bollinger specificity - 5 to 10% of reserve wines kept in magnums. Matured for a minimum of 3 years.
Producer Information
Founded by Jacques Bollinger in 1829, this house is one of the few in Champagne to still be family owned. Two-thirds of the grapes used are grown on its own vineyards and Bollinger publishes a Charter of Ethics and Quality to clearly outline its practices and preserve and protect them for future generations. The house produces several labels under the Bollinger name, the vintage Vieilles Vignes Francaises, Grand Annee and Bollinger RD, as well as the popular non-vintage Special Cuvee - all known for their superb quality and rich, deep, full flavour.
Regional info.
The grapes mainly come from Grands & Premiers Crus. Two thirds of the grapes come from Bollinger's own vineyards (157ha), which guarantees consistency in the quality of its wines.
30 of the best crus of the Champagne region compose the blends with a minimum of 80% being Grands & Premiers crus
