Tasting Notes
Lean, refreshing & intense with excellent concentration of fruit & just a hint of kerosene on the nose. The palate is dry & zesty with minerally, limey fruit & floral, peach blossom notes.
Vinification Details.
Whole bunches are pressed and given a 4 hours cold prefermentation maceration. The wine is fermented in temperature controlled stainless steel tanks at a maximum of 22 °C.

Jean Baltenweck owns 22.5 acre of vineyard around the town of Ribeauville, and uses organic agriculture methods with no chemical treatments and very low yields. The grapes are grown in 30 year old organically-farmed vineyards on clay and limestone soils.
