Vinification Details.
All red varieties bar Carignan are fermented on skins for 2-3 weeks with daily pumping over and delestage. For the carignan grapes, the traditional carbonic maceration method is used.
Producer Information
Chateau Fontareche is one of the oldest estates in the Languedoc, situated in the departement of Aude, just a few kilometers north of Lezignan-Corbieres. It is property that once belonged to the Archbishop of Narbonne. The origins of the chateau date back to the 14th Century. Today the estate has 150 hectares of vineyard, divided between the Corbieres parcels for the AOC wines and the vin de pays parcels for the varietal wines. The vineyard is situated on a clay limestone terrace with pebbles.

The owner of this domaine, Arnaud de Lamy was oenologist at Chateau La Conseillante and recently returned to his family's estate in the Corbieres. Chateau Saint Eugene is a 14th-century chateau that sits at the centre of its 200 hectares of vines, just north of the village of Lezignan-Corbieres, near Narbonne. It is one of the oldest estates in Languedoc-Roussillon; the Archbishop of Narbonne had a fortress built on the site in 1201 and the chateau's vineyards were first documented as early as 1350.
The property remained a part of the See of Narbonne until 1682, when it was bought by the Mignard family. Since that time, the estate has remained in the hands of the Lamy family, who are direct descendants of the Mignards. The wines the estate makes today come from its old vineyards (40+ years old), and reveal a perfect synergy of the wild, herby scrubland that is the Corbieres vineyard and the aristocratic breeding that is Chateau Saint Eugene.
