Tasting Notes
The Chilcas Single Vineyard Cabernet Franc stands out for its intense purplish-red color, while the nose displays high aromatic intensity with aromas of blueberries and raspberries accompanied by a touch of caramel and chocolate. Big-bodied on the palate with an abundance of soft, elegant tannins and a long finish.
Vinification Details.
The grapes here are hand picked during the last week of April, placed into 10-kg boxes and carefully transported to the cellar immediately, where they are rigorously inspected on a selection table. The bunches were then destemmed with as little berry breakage as possible and deposited into stainless steel tanks for a 4-day pre-fermentation cold maceration at 8 °C-10 °C (46 °-50 °F) to extract the maximum aromatic and varietal characteristics. 100% of the grapes are fermented in stainless steel tanks for a period of 26-28 days at 27 ºc-29 °C (81 °-84 ºF) to preserve aromatic intensity. 100% of the wine is aged in French oak barrels for 14 months. The wine was naturally cold stabilized during the winter and later earth-filtered prior to bottling.

Chilcas manages vineyards throughout all the major wine valleys in Chile, allowing it to grow and select only the best grapes from the most compatible terroirs. 38 hectares are officially classified as organic - a status achieved through adhering to strict regulations, not using synthetic pesticides or easily soluble fertilizers, and a genuine love of the land.
The arrival of new winemaker Rafael Tirado means the care and attention in the vineyards is carried through to the winemaking process, ensuring the creation of individual wines. The results are vineyards with rich biodiversity and wines with true regional expression.

The Chilcas Single Vineyard Cabernet Franc comes from the Maule Valley, in the vitivinicultural center of the country. Its temperate Mediterranean climate has hot summer days and rather cool nights, and the temperature can vary as much as 20 ºC (36 ºF) in a single day. This produces fruit with better aromas, flavours, and varietal expression. The vineyards receive a maritime influence as cool Pacific air enters the valley through the Mataquitos and Lontué River basins, and the Andes Mountains contribute clean water for irrigation; both factors are very important for vineyard health. Winters are rainy (700-800 mm / 27.6-31.5 in per year), and summers are dry with an average of just two brief rainfalls, which is good for healthy fruit and controlling water in the vineyards. The 11-year-old vines that produce the grapes that go into this Cabernet Franc are vertically positioned, drip irrigated, and planted in a 1.5 x 2.2 grid in the RÃo Bonito vineyard. Foliage management begins in the spring with a selection of shoots. December leaf plucking from the side of the vines that receives the morning sun provides the grapes with better solar exposure and improves ventilation. Crop thinning removes agglomerations of bunches, bunches on short shoots, and those that are not ripening properly to promote good ventilation and to adjust the crop load to a yield of 7-8 tons per hectare.
