Tasting Notes
Its intense, attractive nose offers aromas of black fruit such as blueberries, blackberries, and ripe plums with noticeable spiced accents of black pepper, nutmeg, and cloves intermingled with subtle floral and caramel notes. Intense vanilla and smoke aromas combine with light wood and leather notes, all from barrel aging. This wine has lovely juicy tannins on the palate.
Vinification Details.
The grapes here are hand-picked in the third week of April and taken carefully to the winery where they are inspected on a sorting table then gently destemmed to prevent the berries from breaking. A 3-day pre-fermentation maceration is carried out at 8 °C -10 ºC (46-50 ºF). 100% of the grapes are then fermented in stainless steel tanks for 25-28 days at 27 °C-28 ºC (81 °-82 °F). During fermentation, 4 to 6 pumpovers are carried out to move 50% to 100% of the volume, as determined by enological tasting. 70% of the wine is aged for 8-10 months in oak barrels. The wine was naturally cold stabilized during the winter and later earth-filtered prior to bottling.

Chilcas manages vineyards throughout all the major wine valleys in Chile, allowing it to grow and select only the best grapes from the most compatible terroirs. 38 hectares are officially classified as organic - a status achieved through adhering to strict regulations, not using synthetic pesticides or easily soluble fertilizers, and a genuine love of the land.
The arrival of new winemaker Rafael Tirado means the care and attention in the vineyards is carried through to the winemaking process, ensuring the creation of individual wines. The results are vineyards with rich biodiversity and wines with true regional expression.
Regional info.
The Chilcas Reserva Syrah 2009 comes from the Maule Valley, 260 km (162 mi) south of Santiago. The valley is very geographically diverse, with a Mediterranean climate and well defined seasons, including a warm, dry summer with significant day-night time temperature variation and a cold rainy winter. Average annual precipitation here is 670-700 mm (26.4-28 in) and occurs primarily in winter, leading to more concentrated wines. The Syrah grapes used for this blend come from the 9-year old vines of Block 5 of the El Condor vineyard. These vertically-trained vines are planted 1.2 x 2.2m apart and drip irrigated. At the end of December the leaves around the clusters were removed on the side of the morning sun, achieving 60% fruit exposure and good ventilation. Cluster thinning consisted of eliminating bunches on short shoots, those with incomplete veraison, and conglomerations of excess clusters. Yield was 9.7 tons per hectare.
