Tasting Notes
Quite deep and concentrated on the nose, it opens up on the palate to reveal crisp casis fruit with smoky edges and a hint of green pepper all hung on a ripe, firm structure. Excellent balance, with a definite nod to the best of Bordeaux in style.
Vinification Details.
Harvested at phenolic ripeness the free-run juice (no press juice was used)were fermented for three weeks in open-top fermenters with the cap punched down twice a day. 100% malolactic in barrel with 18 months maturation in small French oak barrels, 80% of which were new and the remaining 20% one year old. The wine was bottled unfined and unfiltered.
Producer Information
Brother and sister team Abrie and Jeanette Bruwer are the complete opposite of your typical university trained have-cultured-yeast-will-travel flying winemakers. Their wines are all about their rocky, unforgiving terroir in Robertson and stand head and shoulders above most producers for sheer quality. Their obsession is reflected in Abrie's philosophy; "I only want to sell wine I am proud of and I will only get a limited number of chances to do that in my life."
Regional info.
The work of time is the result of Abrie and Jeanette Bruwer's patience in waiting for their Merlot, Cabernet Franc and Petit Verdot vines to mature so they could add the juice to the Cabernet Sauvignon they already had a create the Bordeaux blend they dreamed about. The vines are grown on the Springfield estate on shallow south-facing slopes with chalky soils.
Dubbed the 'valley of vines and roses', the Robertson district's lime-rich soils make the area eminently suitable for racehorse stud farming and also, of course, winegrowing. Situated in the Breede River valley, the river is the lifeblood of this lower rainfall region. Although summer temperatures can be high, cooling south-easterly winds channel moisture-laden air into the valley.
Robertson is renowned for the quality of its wines and while traditionally considered white wine territory and known mainly for its Chardonnays and more recently for the quality of its Sauvignon Blanc, it is also the source of some of the Cape's finest red wines, particularly Shiraz and Cabernet Sauvignon, while the distinctive fortified dessert wines for which it was originally famed continue to be produced. The district of Robertson incorporates several wards, including Bonnievale.
