Made by direct press or pressurage direct, the must is fermented without skin contact at low temperature to enhance the bright summer-fruit flavours typical of the Sangiovese grape.
Producer Information
Founded back in 1966 when a collection of small independant Italian wine growers joined forces to share their skills and knowledge, and export their wines to the world. Today Caviro is the leading Italian wine Co-operative consisting of 36 partner wineries and over 18,000 wine growers throughout the leading wine regions of Italy.
Regional info.
The wedge-shaped northern Italian province of Emilia-Romagna lies just above Tuscany, and south of Piedmont. Centred around the city of Bologna, Emila Romagna is famed not so much for its wines, but for its two inimitable food products: Parmesan cheese, and Parma Ham.
Its wines might be considered northern Italy's odd lots, different on the whole from the neighbours', often facile in style, but nearly always refreshingly individualistic. It is a relatively big producing region (actually 4th-biggest in Italy on total volume), with around 75% of wines being red. The local favourite is Sangiovese, whose name comes from sanguis Jovis,"the blood of Jove", most famous as the main component of the Chianti blend in Tuscany, but it has been grown in Emilia Romagna since ancient times.
