Domaine Dauvissat

Domaine Dauvissat is arguably the finest domaine in Chablis. It was founded in the 1920s by Robert Dauvissat, although its reputation was established by his son Rene who managed the domaine for many years. Vincent started working with his father in 1976 and has been in charge for the last 5 years. There are 11 hectares of vineyards split between two Grand Cru and three Premier Cru sites. Yields are tightly restricted and in the winery the vinification and maturation is painstaking and meticulous. The juice remains in tank for an entire year before being transferred to oak barrels, a small percentage of which are new. The wines have a purity and intensity of flavour seldom encountered in Chablis today. The cave is positioned under the family house and the first formal bottling occurred on a limited scale in 1963. Thereafter Jean Dauvissat increased production, the physical expansion of the domaine under his management, along with ever-increasing quality and accompanying renown, has resulted in this domaine's solid reputation for producing fine Chablis.
