Our friends over at Bisol have been studying the islands around Venice for the past five years and have managed to restore ancient vineyards of the indigenous grape, Dorona. They are re-establishing the area to create the Scarpa Volo Estate, on the island of Mazzorbo, in the Venetian Lagoon.

Gianluca Bisol explains:

"I have always been fascinated with the food and wine history of the lagoon. This result represents the fruit of five years of work in which we have been researching the history of the local grape varieties in Venice, widespread until only a few centuries ago."

The grapes will be harvested this year, and the new wine, named Venissa, will be ready for release in 2011. Due to the exclusivity of the grape and the vineyard, the only way to get your hands on the wine will be by reservation. The well known chef, Paula Budel, will open her exclusive new restaurant on the island, named Paola Budel per Jada.

For those interested in visiting this rather magical sounding place, the Bisol team have also opened a hotel on the nearby island of Certosa, within the Ventian Lagoon. Vento di Venezia is a three star hotel surrounded by native Ventian vegetation, serves local foods, and has stunning sea views.

The hotel is easily accesible; just hop on the Fondamenta Nuove from Venice airport and transfer to the no. 42 bus direct to Certosa island!
